Glazed Potatoes (Brúnaðar kartöflur)

Sugar-glazed or caramelized boiled potatoes, brought here from Denmark in the 19th century, accompany many traditional Icelandic dishes.

 

1 kg potatoes

100 g sugar

50 g butter

 

Boil the potatoes, drain them and peel when they have cooled. Cut them into halves or quarters. Sprinkle the sugar evenly on a frying pan and heat it. Watch the sugar carefully; it should melt but not burn. Melt the butter, stir with the sugar and cook for a minute or two. Add the potatoes and stir until they are covered in caramel and heated through.
