Halibut With Leeks and Mushrooms (Lúða með blaðlauk og sveppum)

This recipe is best suited for fillets of a small halibut. Other flatfish, such as plaice or sole, can also be used.

 

7-800 g halibut fillets

1 lemon

salt and pepper

2 leeks

200 g mushrooms

2 tbsp oil

1 tbsp butter

200 ml cream

50 g cream cheese

1/2 tsp paprika

3-4 tbsp chopped parsley

 

Preheat the oven to 180°C. Cut the fish in pieces and squeeze half a lemon over them. Season with salt and pepper and place the fish in a buttered ovenproof dish. Chop the leeks and slice the mushrooms thinly. Fry the leeks for a few minutes, then remove them from the pan, add butter and stir fry the mushrooms. Put the leeks back into the pan along with the rest of the ingredients, heat slowly and stir until the cheese has melted. Season with salt and lemon juice and pour over the halibut. Bake for 15-20 minutes, or until the fish has just cooked through.
